  1. Can't Stay Awake

Hi Bluestar It sounds like you are doing all the right things with CS...staying Kosher and with good foods. Not to sound like "got one better", but add on being a diabetic and counting carbohydrates too!
  2. Thank you all for your responses. I have found out that potato starch and potato flour are different and not interchangeable as potatoe flour is heavier. However I dont know if potato starch and potato starch flour are the same. Ill try to get ahold of Bette Hagmann or one of the other gluten-free cooks to find out, and post back. Thanks again Joy
  3. Can't Stay Awake

Hi Lee I was glad (in a way) to see your inquiry, although I dont have any answers for you. My husband is newly diagnosed with CS and many of his symptoms differ. He is always tired, particularly in the mornings after he wakes up. When he wakes up he has chills and hot flashes which might be making him tired. He takes a nap in the afternoon, 2-3 hours, and he always feels better then. At night he has leg movements, but he is not snoring at the time, as one other respondant noted. It doesnt wake him up, but it does me. Other symptoms he has is a generalized rash over the trunk of his body. Does anyone else have this? Does it go away? I just want to commend you for using this site and reaching out the way you have. You're exploring all the avenues and go on with fulfilling your life. Congradulatons and keep up the good work! Joy
  4. Looking for knowledgeable Dr. in Sedona AZ. or even as far as Phoenix. Have been to multiple specialist but was finally diagnosed by blood test recommended by a nurse.....
  5. I have seen so many recipes that are confusing! Example is to use Tapioca Starch....is it the same thing as Tapioca Flour? I've seen this and other examples many times. I know Potato starch and Potato flour are different but I'm confused elsewhere....HELP is appreciated if you know.... Joy
  6. My husband is a new celiac and I am learning to cook all over again....I asked the health food store for potato starch flour, used in so many recipes and they said I had to order a case as they didnt sell much. What I got was potato flour. I need to know if it can be converted to potato starch flour by adding something such as corn starch? This is new for me too, I am a willing supporter and want to do this right. Any help is appreciated! Thanks Joy
