The reason I ask is because I am a franchisee and will be opening my first location in 8weeks. Being a celiac, I would like to have gluten-free bread available to others like me.   2. What do you believe is the best gluten-free bread? - either a mix or from scratch. I've tried several myself, but wouldn't consider any of them to be all that. I've given up on buying whatever I can get my hands on and then having to throw it out once it's baked. Let me know what you suggest and I'll try it
