  1. Kroger has a dietitan line and they are fantastic. I even call them from the store on my cell if I want a Kroger product and it has some mystery "natural flavor" on the label. They are open during the week from 8-5 EST, I think, but not on the weekends! They are a great help and very easy to work with. 1-866-632-6900
  2. Thanks guys. You made my weekend!
  3. I swore I had read that this product was gluten-free and if you read the ingredients.....it could be gluten-free, but it has several of those elusive ingredients. I could not find it on any of my gluten-free lists once I got home from the store, and the product information is closed until Monday. I wanted to use it this weekend. Can anyone help me on...
  4. My kids love beanies and weanies. I just slice gluten-free hotdogs in Bush's beans and they love them. Have you tried gluten-free chicken nuggets? I make my own. Or just grilled chicken slices? My son loves to dip them in dressing or BBQ sauce. We also make homemade rice crispy treats and Jello Jigglers. These are not the most nutritious choices...
  5. I gained too. I went from 106 soon after diagnosis to 130 in 2 months! I was shocked. My body absorbs anything. I got mad, b/c my clothes did not fit. I just want to loose about 10 lbs, so I do not have to buy a whole new wardrobe and I like being 120. So I decided to get serious. I got the South Beach Diet and once I started reading the recipes and...
  6. I rewallpapered my bathroom and it was a 30+ hour job, done over a week's time. I primed over the existing wallpaper and then applied a wallpaper which already had the adhesive on the back. I remember reading a story about a man who's career was wallpaper hanging and he had to find another job once he was diagonosed with Celiac b/c of the wheat found in...
  7. Thanks Kim. I will go check out that article.
  8. Thought you might like one more opinion. When I was diagnosed w/ celiac disease, I was having a very hard time with any of the hydrogenized oils. I still try to avoid them. They are in alot of the processed peanut butters to keep the elements from separating. I now buy the natural peanut butters and do not have a problem with them at all, although I do...
  9. I am confused! I know that Heinz white vinegar is safe, but when I see it in salsa etc, is it ok? I am one of those Celiacs that has a minimal reaction to gluten and sometimes wonder if I ingested it or not. So help! What rules do you guys follow on white vinegar?
  10. I saw this recipe on Americas Test Kitchens and the goal was to create a homemade mac-n-cheese that tasted like Kraft. This really worked. My kids loved and and my not gluten-free husband said it was very good. I used rice elbow noodles and gluten-free bread crumbs. Everything worked wonderfully. Yum Yum! www.americastestkitchen.com Stovetop Macaroni...
  11. I like to cook and used to cook and freeze before going gluten-free. My question is what gluten-free things freeze well? Noodles, vegtables, etc. And if you cook and freeze, what do you make? I have gotten pretty good at a low fat chili and experimented with some soups, but I am curious about lasagna, rice dishes, etc. Thanks for the help.

    ARCHIVED Communion

How do you guys deal with this. At my church we tear off a piece of bread and then dip it in the grape juice. Obviously, I cannot participate. Anyone dealt with this problem already? What was your solution.

ARCHIVED Pediactric Gi Doctor In Dallas?

Well, we saw Dr. Whitney today and after discussing each child individually, reviewing family history and watching her eye brows go up when she saw their IGG blood test results. The verdict is Austin is going to have an upper endoscopy in two weeks. Since he is my child and eats out of my gluten free kitchen, we do not have much gluten in the house.......
  14. Thanks for the help! I learned something.

ARCHIVED Pediactric Gi Doctor In Dallas?

Glad the two of you got together! I started this post and had no idea where it might go. Say a prayer for us. I am taking my two kids to see Dr. Annette Whitney @ Medical City in Dallas tomorrow. Hopefully, she will be able to help me understand their high IGG blood tests. Red, I thought the R.O.C.K. (Raising Our Celiac Kids) group might be able to...
  16. Not a word. But, I may order one thing and give it a try. I'll post if I do. Have you tried buying rice and tapioca flours at an Asian market? I haven't, but my Diet mentor provided by my local Celiac Sprue charter swears by hers. She pays about $0.89/pound. That beats the $3.00 plus per bag I paid for at Whole Foods!
  17. I baked salmon for dinner and have leftovers....kids did not go for this new food very well, but my husband and I like my new recipe. Thus, I have leftovers. Anybody ever frozen salmon leftovers?
  18. Anybody ordered flours, starches, etc. from www.bulkfoods.com? They have some pretty good prices and they ship in 48 states for @$5.00 an order no matter the weight. Being one that really bakes gluten-free, I would love to use this site, but was curious about cross-contamination. Could be a good resource, but unsure about the gluten-free issue. I just...
  19. Well a Big Texas welcome to ya! I live in Rockwall....a growing town just East of Dallas. Denton will have the usual Outback Steakhouse, Wendy's, and other reasonable chains so you will do fine. I do not go to Denton often but if you are going to be in Texas find you a good Steakhouse. I have had great experiences and Texas is know for good...
  20. I am looking for a Pediatric GI doc for my children. I want one that supports Endolab and Dr. Fine's philosophy of non-evasive testing of children....especially since I, the mother, am the one with celiac disease and I need to have my children's high IGG blood tests reviewed by a professional.
  21. Double check the yogert. The added ingredients in there took me by suprise when I first started gluten-free. I had a coffee yogert right before I went to see my GI doc and I felt horrible! I went back and checked the ingredients and guess what; one of them was one I should have avoided, but I did not know at the time.....so double check the yogert. Some...
  22. Thanks Mariann. It helps to get a clue from someone else. I will be checking into this much more. I appreciate your help. Lisa
  23. Once diagnosed, one of the first thing my doctor told me to do was to get my kids tested. So, we ran an IGA test, which for both kids came back normal. Thank God for that right now. At the same time an IGG test was run.....Normal is below 20 or 30. One child was in the high 80s and one was 120. That is very high! What does it mean? I ran into...
  24. Unfortunately for you, as I have gone gluten-free, I have felt better. But when I was diagnosed, my gut was swollen.....and when we did a small bowel X-ray series as well as a CatScan, I showed an area of my gut that was thick and inflammed. This really concerned my doctor and we did go in and do a surgical small bowel biopsy to make sure there was no cancer...
  25. I hope you are still collecting data.... 1. Female. 2. English, German, and Irish. 3. I was 35 when symptoms got bad and 35 when diagnosed....but it took about 6 months b/c both the doc and I did not take it very seriously. I thought I was just getting older and needed more fiber....wrong! 4. 5'4" before and have not been measured...
