  1. Happy birthday and may God bless you today!

  2. The local celiac support group is good source of support.
  3. I make pumpkin tarts without any crust. Simply make the pumpkin pie filling, pour into single serving foil tart pans and bake. I find the foil tart pans in the grocery store with the other foil baking pans.
  4. I use 1/2 broth and 1/2 water and add salt and pepper.
  5. Adorable
  6. If you are doing well on the gluten free diet after 3 months you should be able to introduce processed foods back slowly if you choose. Of course, it is always healthier to eat non processed food gluten free or not. It is easier to determine if a food is gluten free or not eating non processed foods. I try to buy processed food with simple ingredients I...
  7. What kind of cooking facilities do you have access to? Below are some of the things I eat: Soft corn tortillas (I like Mission), cold cooked meat, chicken or fish, cheese, tomatos and lettace. Place corn tortillas on a plate, place cooked meat, chicken or fish and chicken on one half of the tortilla. Microwave for about 45 seconds. Add tomatos and...
  8. Meat free spagetti sauce or chili over rice, rice pasta or stuffed in baked potatoes with other cooked veggies.
  9. 30 years of basically good health. I was lucky to be diagnosed within 9 months of the onset of symptoms. I have been able to work, have a child and travel. If I had not been gluten free I would have been very sick.
  10. This is my quick and easy microwave pizza: Three sof tcorn torillas (I like Mission) Gluten free pizza sauce (I like Enrico's) Cheese (shredded or sliced thin, you choice - I like a combination of chedder and white cheese) Pepperoni Place two corn tortillas on a plate, put on sauce, cheese, and pepperoni, place one tortilla on top. Microwave...
  11. Consider buying an softside insulated lunch box or small can cooler. I know You can find these at Target near the camping section. With the addition of blue ice cold food will keep 6 to 8 hours. I wrap my food in blue ice mats when I go to work. This would allow you to add a cold cooked meat such as chicken to his traveling food. Also, you might want...
  12. Living without specialty gluten free foods is how I started out 30 years ago. These foods were not readily available or for that matter worth eating. I still don't us a lot of specialty gluten free foods. I can manage without.
  13. I had my gallbladder out a little over a year ago. I got four opinions. All agreed it needed to come out because mine were lots of small stones not a few big stones. There were not any alternative treatments for sludge and small stones. My liver and pancretic enzymes were elevated. If I did not stay on a very, very low fat diet I had gallbladder attacks...
  14. Happy Birthday!!!!!!!
  15. Happy Birthday!!!!!!!
  16. Sorry to take away the smile but Kix is on the questionable list for cereal. It has oats in it. Oats, as long as they are certified gluten free, are thought to be ok for Celiacs but some Celiacs can not tolerate them. Most oats can not be eaten by celiac due to cross contamination during the growing and harvesting process. Rice Chex have recently become...
  17. The rice cakes are Lundberg's. They come in a number of flavors. I find them at WholeFoods.
  18. I suggest you check the hopsital website and see if there are directions for requesting medical records. Also, you may have been talking to the wrong person. When I needed hospital medical records sent off to support my time off for work when I had surgery I had to talk to the medical records department in the hospital. The other alternative is to have...
  19. Planning. Know the restaurants in your area where you can get a safe gluten free meal. If you even think you will be away from home beyond your next meal take food with you. See the Travel section of this board for ideas when you need to be away from home beyond a day or two. Be self suffient. Don't expect gluten free food to be available at social...
  20. Thanks for the receipe. I plan to try it this weekend. It looks like the leftovers will be good for lunches on workdays.
  21. You might consider contacting you local Celiac support group. They may know of someone who does home daycare in a gluten free household. I hope whatever decision you make turns out well.
  22. I make crustless pumpkin tarts in single serving small foil pans I find in the grocery store. I simply make the pie filling, put them in the foil tart pans and bake. Maybe this concept could be applied to Apple tarts. The disadvantage to this is that these can not be eaten with little fingers. A fork or spoon is required.
  23. Below is a link to Bob's Red Mills gluten-free "Hot" Cereals Open Original Shared Link I have not tried any of them but you can order them online directly for Bob's Red Mills. I have seen some of them at WholeFoods Another option is Certified Gluten Free oats if your son can tolerate oats. Not all Celiacs can.
  24. I always bring enough food for the whole trip plus some. I never count on the gluten free meal being on the flight or being correct. If a gluten free meal is available to order I will request it. I make the decision when I receive the meal which parts of it I will eat knowing I have my own food. American has done a good job with the gluten free meals...
