Touching bread with bare hands?

I care for a person who is no longer able to care for themselves, they are still sound of mind they just can't move around like they use to. I create their meals every day I am a Celiac I was diagnosed years ago as a child and I don't eat any kind of gluten haven't for years. But I do touch it, I make sandwiches everyday for said person with my bare hands, I am not sure if its necessary I wear gloves as I do wash my hands before and after. I do have stomach problems and a part of me wonders if I am somehow taking in gluten even though I am not consuming it.  Also person refuses anything gluten free, she doesn't like gluten free anything. Any thoughts? Or suggestions? Thanks for reading.Â
