Its not just Bleu cheese, its any soft cheese. Bleu Cheese is just the most popular. Because Cheese making is an art, and the processes are kept secret, they do not have to list if they use bread to make the cultures for the soft cheese... so none of them can be considered safe... Richly veined cheeses like Maytag blue and Stilton are off limits as well....
