  1. I was diagnosed several years ago and recently I began to have episodes of my hands itching for no reason that I could detect. The only thing that stops it is to take a Benedril. Has anyone else experienced this? It's driving me crazy.
  2. About 10 years ago. I got to the point that I would start having a panic attack if I was out. I had to quit my job and haven't been able to work since. I've been on Paxil for the last 18 months and have been able to go out more but I still have panic attacks for no reason once in a while. No where near as bad as before.
  3. I guess their real busy. I think I might be a little bit to far away to attend the meetings. I'm 150 miles from Lexington and even further from Louisville. ;-) I doubt if I could go if I was close enough. I don't go out much. I have a problem being around people. I pretty much stay at home except for church and grocery shopping when I can't get hubby...
  4. Hi Not exactly sure where that is. I'm from Letcher County. Near the KY/VA border. About 30 miles souteast of Hazard.
  5. I noticed there hasn't been any posts here for a while. Is anyone from KY still here? I live in the mountains of Southeastern ky and as far as I know I'm the only celiac. I've been a member for a long time, just haven't posted in a long time. Hope someone is still posting from KY. Lucy
  6. You might also try potatoe flour or amaranth flour. I've used both and they are a little less grainy than the rice flours.

  8. Thanks for all the help. The area I live in is so rural that the only place that carries gluten-free products is a Food City and the only thing they have is Rice Flour. Hey Webgyrl, thanks for the info, I'll check them out. I could order online but can't really afford the cost of the product plus the cost of the shipping. I love to cook and use...
  9. Thanks Sara, This is a recipe for gluten-free noodles and it calls for: 2-1/2 cups White rice flour 2/3 cup Potato starch 1/3 c Tapioca Flour 3 tsp Xanthum Gum I have the different flours but I don't have the potato starch but I do have corn starch. Potato flour and potato starch is impossible to find in this area. Just wondered if I could substitute...
  10. I find so many recipe's calling for potato starch. My question is can I substitute Corn Starch for Potato starch?
  11. Thank you very much. I appreciate your answer. Lucy
  12. Okay, I give up. I've been trying to find out what Xanthum Gum is and what it's purpose is. I know that I probably sound dumb but I can't seem to find an answer. I asked the lady at the health store and she said it was used as an egg substitute. Is this true? I'm new at this, just diagnosed in November and I still am having a hard time baking any thing...
  13. Thanks a lot Shirley I'll have to have my daughter check and see if there is one in her area. She lives just outside of Chattanooga in Alabama. She goes to the city all the time. Wow! those are some really great prices. DH just brought me home a bag of brown rice flour and it was 3.00 for a 1 1/2 lb bag. Thanks again for the advice. Lucy
  14. I'm not sure about the pediasure but there is a form that you can fill out for your taxes so that you can claim anything that you have to buy because of being gluten-free. You can claim the difference between the cost of what you normally eat with what you now have to eat. Such as the difference between a bag of wheat flour and Rice flour. But you have to...
  15. Welda, I'll definitely try it. I have a recipe for Quick and Easy muffins and I have been eating them for quite a while. I take peanut butter and Jelly and smear it in the middle and it's wonderful. Here it is if you want to try it. 1/4 c sugar 2 tb shortening 2 ea eggs 1 c rice flour 1/4 ts salt 2 ts baking powder 1/2...
