My DS also reacted to the Apple Wagon Wheels. I had to only give him food that actually said Gluten free before I could get rid of most of his symptoms. I just when gluten-free myself because I breast feed and I'm hoping that gets rid of the rest of his excema. I have no idea if I have celiac disease but I seem to remember feeling better when on a low carb...
