  2. I just had my first follow-up blood work done, six months post diagnosis. The only odd result was that my WBC dropped from 6.8 to 3.8.   3. I have been recently diagnosed with celiac disease. I am wondering if others experience joints in their fingers feeling spongy and stiff. My hands feel weak, especially in the morning when I can barely grasp anything.
  4. Many products contain soy lecithin. Is this a gluten-based ingredient? Do soy derivatives in general contain gluten? What about emulsifiers?
