  1. As far as something like egg beaters or allwhites.. why they do not whip up... it isn't necessarily about what is added to them, it is about what is done to them. Pasteurized egg whites do not whip as well cuz the mild heating during the process partially denatures (or cooks) the protein. The proteins have been slightly reconfigured and won't form a stable...
