  1. Hello all, I am so BORED with my gluten-free lunches, I need some new ideas! I usually make a big dinner and then eat the leftovers all week for lunch. For the last year all I've made is: rice noodle lasagna Ricotta and spinach pie rice crust pizza I am not a big fan of gluten-free breads- very crumbly- but I would like some options. What are...
  2. Happy birthday and may God bless you today!

  3. On Saturday I am staying at a hotel with 3 friends. I have an event the next day, so I don't want to risk a restaurant. The hotel is only an hour away from my house, so I don't have to worry about food spoiling, I just won't be able to heat anything up in the hotel. We were thinking finger food so that we don't have to worry about plates, utensils etc....
  4. Hi! I thought this would be a fun thread. Post you all-time favorite gluten free dinner recipe. There are a lot of bad ones out there - what's your go to? Here's mine: This is a family recipe and it is Delicious with a capital "d". It is great hot or cold and I frequently bring it to work for lunch with an apple. Ricotta & Spinach Pie I...
  5. HI Storm, I definitely relate to you - we have all been there and it is a major change in the beginning. But then it just becomes second nature and you are feeling so good that the diet doesn't seem like a sacrifice. Even though it was awful, I think the best thing that my GI did was to keep me on gluten before the endoscopy. I was so ill that I...
  6. Hi everyone, it's been a year since I was diagnosed with Celiac and I'm feeling great. I've adjusted to the diet, and because I'm feeling so good I don't view it as a sacrifice. The problem is that it seems at dinners and family gatherings someone will ask a lot of questions. I'm sure they do it because they care, but it makes me feel singled out and...
  7. White rice isn't the only type of rice you can eat - if you make it yourself. Unfortunately, a lot of spices and bouillon have gluten in them, so you can only have white rice at a restaurant. When you first make the switch, I recommend getting a gluten-free grocery guide type of book. Mine was invaluable in what can seem like an overwhelming change at...
  8. Hi Susiequsie, I have been making this same transition for the last 6 months. This site is a great resource for recipes and ideas. I recommend that you get a rice cooker, if you don't have one already. The best are the ones that have "fuzzy logic" meaning they constantly read and adjust so you have perfect rice every time. Mine is by Panasonic, but...
  9. Hi- For all of the Boston Celiacs out there, I found 2 new restaurants that are safe: 1. Gargoyles on the Square: (Thai French Fusion) Somerville No dedicated menu, but one of the chefs has Celiac. It was restaurant week and he even made me a special sauce for the dish! 2. Tasca: (Tapas) Brighton Dedicated Gluten-Free Menu
  10. Two weeks may be enough. That is what was recommended to me as well. I had positive blood work and have been gluten-free for 10 days. I asked to have a biopsy done as well to confirm, and the endoscopy doctor said 1 slice of bread for two weeks would be plenty to have conclusive results. But then again, it may just be because I have been only been gluten...
  11. That makes sense, but I wonder if positive blood tests can mean only gluten sensitivity, not Celiac disease. One is so much more serious than the other. Does anyone know if these positive blood tests can mean just gluten sensitivity w/o Celiac disease?
  12. I am newly diagnosed and leaving for Ireland in 3 weeks to visit my boyfriend's extended family. His family is large and live on beautiful farm in a rural part of Ireland. The good news is that, as I remember from my last visit, there will be ample potatoes. What I don't know is how they will be prepared or if gluten-containing ingredients will be used...
  13. My doctor diagnosed me with Celiac based on positive Endomysial AB and Transglutaminase IGA tests. She told me that the results were virtually 100% accurate and that I do not need further testing, but when I look online it seems like a lot of websites advise endoscopy for diagnosis. Did anyone else only have blood work and not an endoscopy? I guess...
