  1. I use the term gluten-intolerant because a biopsy and blood tests have not shown Celiac. However, I was already off gluten grains and other products for 6 months at the time. IF I had been diagnosed as having Celiac Disease, I think I would still say gluten-intolerant as people react more strongly to someone having a disease. They undertand food problems...
