Just wondering if this is really all old news or does anyone use this lab? I read a lot of old posts where the lab was controversial. I see it is still in operation, and I did have some tests run by them, now I don't know how to present it to my doctor as I don't think he'll be very receptive to the results? Any suggestions or new feelings on the legitamacy...

And these flour blends can replace the regular all-purpose enriched white flour I am used to using? Also...what about butter, does butter work the same as oleo? I am used to using butter in everything, should I switch to Crisco for baking?

I am wondering if an all-purpose gluten-free flour mix can be used in all of my favorite recipes that I've always used regular white flour for? ie...the tollhouse chocolate chip cookie recipe on the back of the chip bag? I am hoping there is a quick answer to this, but I have a feeling it is quite involved??
