  1. Had a craving for french toast this a.m., but no rice bread in freezer. Always have plain (no salt) rice cakes on hand so figured I'd give it a try. Egg mixed well, soy milk and lots of cinnamon - need to really mix it on both sides to fill nooks and crannies of rice cake.
