I agree you need to see an allergist. The symptoms you are manifesting are seen in allergies. It may not be the gluten you are eating but the grain itself, ie wheat. I would not consume the suspected food until you see an allergist. The mucous in your throat could worsen and cause your throat to close. Monitor your food and eliminate the suspected food...
