  2. In the last 2 weeks i have been eating gluten-free homemade breads and cookies along with fruits, veggies and nuts- and I feel like I have gained a bit. Which is irritating. I know it is the 'breads and desserts,' but I didn't eat them for so long. It feels llike a sudden weight gain also. I don't know what to do
  3. I don't understand how people gain weight once going gluten free?? When there are fewer available foods.. I have been eating more fruits and veggies, nuts, and been making gluten-free breads and the like...
  4. I read an article about a man with a severe gluten allergy and he had severe headaches and would forget the names of things and activities. Even his family members. Entirely eliminating gluten helped his symptoms. You just have to be really careful. Xanthan Gum- which is in a lot of gluten free products does bother a lot of celiacs. Myself included...
  5. Xanthan is most likely your problem then. I have been baking with Guar Gum instead and it makes a world of difference! Guar does the same thing as xanthan in recipes and it won't hurt you!
  6. I have heard that Xanthan Gum does have a big effect on some celiacs. I was curious because when I ate the bob's red mill, I had bad effects and Xanthan is the only culprit..
  7. Thanks! Both of those posts were very helpful. The Clif bars, I noticed, do have oats and malt flavoring, but I haven't noticed any bad reactions, really. I think I'll take your advice anyway and just stop eating them and see how I feel. -ashley
  8. Thanks for that reply! I never thought of corn as being a problem- maybe I don't want it to be...that's just another thing I can't eat to add to the list. I guess my symtpoms are in my intestines also, it just feels like the stomach..I have all the same as you. Do you find that Xanthan Gum is problematic for you? I think it is for me. What about dark chocolate...
  9. Yeah I made it with soy cheese, which I always eat and never have a problem with. The only thing I can contribute it to is the Xanthan. Thanks! Cross-contamination makes sense..
  10. The two w/o Xanthan Gum were Arrowhead Mills. And the Pizza Crust was Bob's Red Mill (?) I believe.

  12. I have recently made brownies, cookies, and pie crust from gluten free mixes and have had problems the entire night after I ate them. The pie crust mix contained Xanthan Gum and I know that it is a big trigger for Celiacs. But the other two gluten free mxies did not have Xanthan and they kept me running to the bathroom each night.
