  7. I've heard that you can't always trust if "Modified Food Starch" is gluten free. But sometimes I see "Food Starch-Modified (Tapioca)" or "Food Starch-Modified (Corn)". Are those gluten free? For example, there is a new Starkist Salmon Creations (Mango Chipotle) that I want to try. But it has the tapioca food starch listed in the ingredients.

  11. If they are not the same thing, then does gluten intolerance require the same "all or nothing" approach to a gluten-free diet as Celiac? For example, if you unknowingly consume a small amount of gluten, is it not as big of a deal if you are gluten intolerant, compared to if you had Celiac?

  20. Thanks for the reply. Why do they need to do an endoscopy if the tests were already positive. Are there false positives? I thought they did an endoscopy to rule out false negatives. Also, why are the "genetic tests useless at this point"? Do you mean that I should already have the answers I need after those other tests, so the genetic test is unnecessary...

  24. I'm thinking of going that route. In fact, I started Friday night consuming gluten again. It is Sunday night, and I haven't had any symptoms flare up at all.   25. I have never been diagnosed by a doctor. I just had a handful of symptoms (IBS, acid reflux, sleep problems, lack of energy, headaches, memory fog) that seemed like they could be gluten-related, so I decided to go gluten-free. I went gluten-free for almost 4 weeks. The only symptom that improved significantly was the IBS. Nothing else really changed...
