We lived in New Bern for a year, up until September of '08. Not too many options (other than Outback and the usual chain options) that I can remember. There's a health food store called Nature's Basket with the usual options. If you are going to be somewhere with a kitchen, you might be able to get enough supplies there to help you out (Bob's Red Mill). Otherwise...
