  1. I had a similar situation a couple weeks into my celiac diagnosis, making baked ziti. I was certain everything was gluten-free, then when I felt terrible for two days after, thought I must have been wrong. However, my two daughters, also with celiac, did not feel bad, so I started wondering. I couple "experiments" later, I realized I was reacting to tomatoes...
  2. I ordered gluten free wafers for our church (my husband is the pastor) and he keeps them in a small bowl, separate from the rest of the communion bread. He also has a second cup, smaller than the "regular one," for us so that we do not end up with CC. I thought is would really be a pain for him, but he doesn't mind and thinks it is good that others may...
  3. It is possible that you are sensitive to soy, however, keep in mind that soy sauce (a big ingredient in Chinese food) contains wheat and many Chinese dishes are thickened with flour bases. So, it could be soy, but it is probably still wheat, too.
  4. Personally I love rice crackers! They are great with a little hummus spread; my daughter likes them with cheese, although I tend to avoid cheese at this point. The salty ones are even good plain, nice and crunchy (although, maybe not so good for high blood pressure). There are a few gluten-free brands out there that I like. I usually get them at Wegman...
  5. I hear you! I thought I was doing great with going gluten-free, then started having issues again and figured out it must be the milk. Then, I thought that was good and realized, tomatoes were setting me off. So, I am sort of hoping someone will figure out how to live on air...although I know many people here have more issues than just these, so I probably...
  6. Thanks all! I appreciate the quick feedback!! I am not too worried about the glycemic index (yet!!), but am trying to get away from ultra refined sugars as they seem to bother me now that I am off gluten (sigh).
  7. I am wondering about Agave syrup/nectar. Does anyone know if it is considered gluten free? I know it is supposed to be just agave, but does anyone know if I should be concerned about how it is processed? Thanks!
  8. I definitely hear you! I have three of us on gluten-free diets, which basically means the whole family has to eat that way for the most part and it can get expensive. I can echo those who have said, fruit, veggies, meat, eggs, etc. Those are all the same. I also went to (Company Name Removed - They Spammed This Forum and are Banned) and bought The Essential...
  9. My youngest was diagnosed with Celiac a month ago, myself and my elder daughter almost two weeks ago, so we are not much further along than you are. However, we began to see some little physical changes in the first week or so (less digestive issues, etc), but not necessarily behavioral. My youngest - a month in - is starting to sleep better now and has...
  10. Where are you located? If you are in the Northeast (NY, NJ, PA) or a little south (MD, VA) Wegmans has many great products. They label their store brands if they are gluten free and they are really committed to food intolerances. You can read the letter they sent the FDA regarding labeling and their own production practices on their website. I haven...
  11. My daughter was diagnosed before me -- and she was tested for about everything, I think. The original thought was lactose intolerance, but even though she stayed away from dairy it didn't help much. Later, when my husband was out of work and we moved across the country, we thought it was stress because it really accelerated with throwing up, etc. When...
  12. I am really glad to read some of these posts. My daughter has always been overweight (since 8 yrs old and is now a teen) and we could not figure out why. She ate healthy foods and was on a swim team, for pity sake!! She also, of course, had all sorts of digestive problems but no one ever said Hey, how about Celiac! My other daughter and myself (also...
  13. I am also new to the whole celiac thing. Both my daughters and I have been recently diagnosed (long flukey story for another time), but our gastroenterologist sent us to a nutritionist who addressed this very issue straight off. She said that whether we have immediate reaction or not, cross-contamination is definitely an issue as what we are working toward...
  14. I understand your concerns about needing to go back on gluten, and I have to agree with the others regarding your reasons for getting tested. For me, one of the considerations for my daughters is when they go to college. If they are officially diagnosed, they are eligible for certain accommodations from the colleges. Without that, they might not be able...
  15. Hi! My teen daughter has recently been diagnosed with celiac, so I understand your frustration. There are many boards for Celiac teens, one here on celiac.com, also you can try celiacteens.com and celiacteens.org. Hope this is helpful to you!
