I go backpacking almost every weekend and I have a hard time finding things to eat too. However, REI has a brand that is great. MaryJanesFarm is all organic foods, and the majority of them are gluten free. They are packaged in a facility that processes wheat, but I have not had any problems. Most of them are 1 and a half servings, but I split them up...
