Hi, I'm Nikki. I am a 31 year old wife to Jeff of almost 11 years and mother to four. I have two boys (15 & 13) and two girls (11 & 9.) We are really interested in self-sufficient and green living. We have 3 dogs, 4 cats, and chickens. We love to hike, camp, and just sit in nature. Family is everything to us. We love to get together, talk, laugh, play games and just enjoy our time with them.

I was diagnosed with Celiac recently and as I have read about the disease it's like the biggest lightbulb went off in the world. Wow, over 11 years and this is what has been going on with me all this time. It's amazing that a simple (haha) diet change can reverse the affects of this disease. I am still learning and am really looking forward to getting to know others with Celiac and learn from their experiences.
