As RMJ says, say whatever you need to say to keep yourself safe. If you feel awkward saying celiac disease when you are ncgs then just say doctor told me to follow gfd. I'm based in NH and in Boston we have top celiac disease doctors at Beth Israel, Harvard and Mass General.
