My girlfriend is an undiagnosed Celiac (one false negative blood test so far) with unbelievably extreme reactions to gluten since going gluten free. She had some chronic pain problems that eventually spread to nearly every join in her body, which is when a naturopath had her go gluten free. Now gluten-free (since January 2010), she still has the chronic pain every day, but if she eats any gluten she is literally bed-ridden for 2 weeks and spends a fair amount of the first week moaning and writhing from the extreme joint pain. It is torture to watch and so far we haven't found anything that helps.

I'm not sure if this is exactly what you meant, but once my girlfriend stopped eating gluten she now has a severe reaction if she eats it. She's been gluten-free for about 8 months, and if she ingests a bite of gluten she will literally be in bed for 2 weeks, the first week of which she is in absolute agony.
