I think it's a wonderful idea. I live in San Francisco, and would go to a gluten-free bakery all the time if there were one. You also might consider having dairy free foods, and honey sweetened only foods. Things I would love to buy are pizza and cinnamon rolls, and fresh bread. Yum.
