About Me

Hello, My name is Matt. My mom never told me that I had issues with Dairy whenever I was born and so growing up, well it wasn't nice. I started to feel a little better going dairy free but still had the same health problems. So, About a year ago I was Diagnosed with Celiac disease. I have been trying to figure out why i was always sick and why I had so many Health Issues. I went to over a Dozen different Doctors and they all said, lose weight and it will fix all your health issues, I did try and lost a little but still the same problems and they kept getting worse. And Finally, My Now Present Doctor said, I wanna test you for Celiac. And, since going Gluten and Dairy Free, all my Issues... Gone. So, what health issues did I have, well, I was Diagnosed with Fibromyalgia at 16, Rheumatoid Arthritis at 18, two Ulcers one at 17 and the other at 19, Sleep Apnea at 21, feeling sick and bloated and still hungry after Every meal followed by horrible bowl movements and sometimes vomiting, and being very overweight. But since finding out I have Celiac and going gluten free and dairy free I Feel Great!! And have lost 90 pounds without doing anything except changing my food. I was married to my Beautiful, Loving Wife in 2009. She is my strong tower and what keeps me healthy and alive. Without her, I'm not sure I would make it on a Gluten, Dairy Free Diet. She is the Best thing to ever Happen to me! Sadly, we found this out about 6 months into our marriage and that has been hard on us. Including the Outrageous Grocery Bills. But, God has Blessed us and He continues to take care of us. I'm happy to know that there are others out there that have the same issues as me and I cannot wait to see what others eat!! Well that about sums it up.

  1. I never thought of that. I was just trying to follow docs orders to hopefully get better. lol I notice sometimes the vitamins he has me taking make me sick if i don't eat. So that would make sense. Not sure if this helps but these are the vitamins I take 2xs a Day: These are all Wal-Mart or SAMS brand. Vitamin C -1 Multi Vitamin -1 Fish Oil -2 Fiber...
  2. I haven't tried to incorporate much food because anything I do just does't make it. I will deff. try those suggestions though. I have continued to take all the vitamins the doctor did tell me to take. I take everything twice a day. I was happy to find out that the doctor was able to tell me what I had before my wife changed jobs. We had ins. at that time...
  3. Not that I have seen/caught yet. My temperature is running between 96.8-97.3.
  4. Hello all, It's been a while since I have posted or asked any questions. Recently my wife and I went on vacation. We went to see her family and they understand my gluten-free & DF Celiac Disease. But the problem is that they don't think about all the cross contamination that can occur. We came back home and the day we left I started to feel extremely...
  5. I think to honestly answer this you have to have gone threw this situation. I have tried to go back on a non-gluten free diet and it has successfully not worked. I have tried more than three times to go back to eating Gluten again for certain reasons also, and Each Time I got even more sicker and even worse than the time before that and the symptoms last...
  6. We buy a lot of eggs, Chicken, Turkey Meat, Canned goods, Shrimp, and I think the most expensive stuff is all the "Gluten Free" foods from our Local HyVee. We try to buy different stuff because I got burnt out on cans of Tuna everyday for lunch and sometimes dinner. It gets old eating the same thing all the time. We don't buy processed food because of all...
  7. Well I gotta say, Welcome First of all. I know that the test the doctor did had to be above 15, and mine was double, 33, I'm not sure what test he did but I'll try to find out and maybe someone will know what it means. I'm sorry to hear that your having issues and that your test have been negative. I do hope they find something. My doctor wouldn't do the...
  8. I appreciate that. I'll try either one at this point. I have to say that I really hate that there is no cure. And on top of that, all the food for Gluten, Dairy free people is Expensive. My wife and I spend probably around 800 dollars a month for groceries, and about 600 is just my food. I'm not sure why, but even when I'm eating gluten and dairy free, I...
  9. So, It finally hit today. It has been Horrible and all the celiac disease symptoms are finally taking its course. Yesterday, I had the achy feelings and my arthritis started to settle in. Today, Felt so Exhausted and barely able to stay awake. I finally ate dinner and as soon as we got home, my stomach blew up like a balloon and the rest of the nasty stuff...
  10. Okay, so I had been at work all day, literally, and didn't have time to stop and eat. We had a banquet to set up for and then work at it. They ordered pizza for all the workers and the banquet had a meal catered in. Like i said, didn't have time to eat and I was starting to get the shakes really bad. So, I ate some of the pizza. I know, major mistake. I've...
  11. Sorry it took so long to answer back. I'm glad to know that I'm not going threw something else. I've had similar symptoms but nothing like what had happened. And thank you, I'm starting to feel better. But still getting it out of my system. I also found out today from my Doctor that my blood work came back and I have For-sure, Celiac. He said that my number...
  12. I have been on the diet now for about a year now. But, like I said before it's not completely out because of not knowing that I had a gluten or dairy products or cross contamination. And drinks won't be a problem cause we don't drink alcohol. No i didn't check her makeup cause it's all Mary Kay and didn't even think that could do anything, never thought of...
  13. Thanks So much. I'll try looking at our local wine places. And I'll try talking to management too. I just hate to be the guy who ask to much or end up with someone spitting in my food... lol... but seriously. I guess I feel bad for the restaurant people whenever we go out. But, I guess I shouldn't seeing how they don't have to feel what I feel. I do appreciate...
  14. You don't sound harsh at all. I agree with what your saying. I'm sorry, I should've been a little more clearer. My Wife does care about where we eat. Sometimes we try a new place and that gives me the cross-contamination that makes me sick. She is always worried about my health and very cautious about where we eat and what we eat. Without her, I would have...
  15. Yeah, I have a lot of protein in my diet now. I have three eggs every morning, left overs from the night before for lunch, and a couple of pieces of chicken at night, or something else we make that is homemade. I know that sweets are bad for me though and i could stand to lose a little more weight. lol. And my dairy issue is pretty extreme along with the...
