Hi there! We just got back from Nuevo Vallarta. Where are you staying? This too was our first trip gluten free and had an easier time being there than in the US. I am looking for some meal and recipes ideas that would use corn tortillas. I am really hoping to find some non-tex-mex ideas as well. I just don't want everything to have a similar taste. I find the corn tortillas quick and easy (and safe). Also is anyone has a good gluten-free flour tortilla recipe, I would be really grateful. Thanks, Allie
