I was diagnosed with celiac disease in 2005. I love long-distance backpacking and completed the Colorado Trail in 2003. I'm heading out on the Colorado Trail again in a few weeks (500 miles) as a shake-down hike for a 2012 attempt on the Pacific Crest Trail (2,650 miles; April 2012). I'm comfortable with my gear, but always am looking for food options...
