About Me

I'm from Katy Tx- suburb of houston texas and lived there most of my life. I developed severe gluten problems after a long and lingering case of mono my freshman year of college and found that i was sick every time i ate. My health was on a downward spiral for the year until my mother, who did everything in her power to research my symptoms and discover the cause, saved me from years of suffering by discovering celiac disease. I attended Austin College in Sherman TX and later transfered. I'm a college student studying nutrition at Texas Tech University in Lubbock. I am going to premed and want to specialize in celiac and other autoimmune diseases. I have yet to decide if i wish to conduct research, become a doctor, or a dietician.

I am gluten free, soy free, dairy free. I am diagnosed as gluten intolerant however I more sensitive than most celiacs and it is almost a guarantee that if one person has or had a problem with gluten contamination in a product, I too will have it.

I also have problems with the following (in addition to several more minor food intolerances):

egg whites

carrots

oat

olive

orange

tuna

cottonseed

I have been gluten free for around 2 years now. I have been soy and dairy free for around a year to year and a half. Other food sensitivities and possible additives, chemicals, etc which bother me have been eliminated as around a month ago after taking several more food sensitivity tests and realizing other things which have been causing problems.

  1. My mother has Hashimoto's and although I have had every test under the sun for my thyroid, there has never been an conclusion as to the similar symptoms which I experienced.   2. I think your best bet is to get further testing for other food intolerances and allergy tests may be of use as well. I had no idea that something such as oranges for example bothered me, but you'd be suprised what all you can learn about yourself. For a long time even though I was gluten free, I was still getting sick and having various symptoms without discovery...
