About Me

I am currently a 5th year senior at The Ohio State University majoring in History with an emphasis in Middling Childhood education (4-9). I am a father to a lovely 2 year old girl who is my pride and joy. My fiance who I've been with for 2 years has been a wonderful support and partner in this life. I was originally diagnosed with Celiac's disease in the summer of 2005, however remaining uninformed about my condition I have lived a contaminated lifestyle. I now wish to spend the rest of my life adhering to a strictly gluten free diet. I hope to gain some understanding, and get advice on how to live gluten free!

  1. Great! Thank you all for your advice. I am currently looking for another job, on the other hand I don't flour is a problem because we do not use loose flour as a base for anything. Our thin crust pizzas come pre-covered in corn mill. My biggest issue would be touching the faucet or door handles and then touching my face or mouth. I will continue to wear gloves...
  2. I am still pretty new to my Celiac condition and I was wondering If my job is or could possibly effect my health negatively. I have been working for a number of fast food pizza chains as an assistant manager (Dominos for 2 years. Donatos - columbus ohio local). As a manger it was my responsibility to oversee (wheat) dough rolling. I would roll dough...
  3. Thank you all for your input and advise. I will wait for further diagnosis. I've decided to go ahead and just stick to a gluten free/SCD. I just hope I haven't caused too much damage. I am pretty ashamed of my lack of knowledge and general care for my health. I have begun to taking L-glutamine for villi health, probiotics as an anti-inflammatory, and a daily...
  4. Allow me to introduce myself. My name is Jerick and I was diagnosed with celiacs disease when I was 16yrs old ( I am currently 22 - Also I haven't seen a digestive dr, or gastrologist in 5 years for follow up for my celiac condition. However I have decided to take control of my health and have scheduled an appointment at a local digestive disease dr in the...
  5. I saw this post on google and I wanted to ask an even more specific question. I was diagnoised with cealics diease at the age of 16, however due to lack of knowledge I havent followed my diet as strictly as I should. However I've decided to research and follow my diet as stict as possible. I have been a manager of 2 pizza places for the past couple of years...
