I agree I can usually tell if I get accidentally glutened within 20 minutes. It also takes several days to get back to normal. Before I was diagnosed and was strictly gluten free, the symptoms came at random, but were usually present. Hope this helps!

I bet you are so relieved to finally have definitive answers. I would recommend getting his vitamin levels checked to make sure they are okay. If he has severe celiac damage he may be low in D, iron, ect. Just my two cents
