Does anyone know of a good registered dietician around Portland, Oregon that specializes in celiac disease?

My grandma has celiac disease and was recently in the hospital - the dietician there was great and after a few mistakes was able to get gluten-free meals for her for a week. Now she's been moved to a nursing home and that dietician just doesn't get it. We've had meetings with him to try and explain what's gluten-free but he just doesn't seem to want to...
