I have done a ton of research in the 3-4 weeks since diagnosis. I have a clear understanding of the seriousness of ingesting gluten and how the smallest amount can cause major problems for my body. I live in a small community by comparison and I figured with Chicago so large that my options for shopping gluten-free products would be a lot better there.
