Thank you for your response, Kaiti & Jen! Next question, I have the results of the only two blood tests that my GI doctor has ordered. What is the best way to determine if my diet has been truly gluten-free? celiac disease was the dx one year ago after a biopsy. My symptoms were mild so I removed the gluten gradually at first.
