I know this is an old entry, but I just came across it. I have neuropathy similar to IrishHeart's but my symptom pattern is more like yours. It comes out of the blue and stays for days or weeks. It's horrible. My doctors are starting to disbelieve that it is caused by gluten because it is so random. But I think I am getting tiny bits of cross contamination...
