  3. My daughter's main symptom of gluten sensitivity was anxiety/fear. It turns out she was very deficient in L-theanine. She was also deficient in iron and zinc. A naturopath or functional medicine doctor can help diagnose deficiencies. L-theanine supplementation has been amazing in dealing with the anxiety.
