Thank-you everyone for your help and support, I really feel amazingly different since changing my diet to just spelt (for about 1 week now - I have avoided spelt also). Today there was a lapse though, I had lunch at "Friend of The Earth" organic cafe, and I asked if there was any wheat, and they said no, and unfortunately they forgot about the cracked wheat...
