  5. I'm not so sure about the concept of "gluten withdrawal." I would guess what you are experiencing is actually due to accidental or unintentional gluten exposure. There is a real learning curve involved with consistently avoiding gluten. It shows up in processed foods that you would never expect to find it in. Examples: Campbells tomato soup, most soy sauces...
  6. Some people seem to need an official diagnosis to foster the resolve needed to keep from cheating on the diet. You know, "Maybe it's something else besides gluten." "Or maybe it's just coincidence that I get sick when eating wheat." Other than that, save the bucks. Your improvement when going off gluten is the proof in the pudding.

  8. Looks like you are well below the standard range so I would say you are not consistently being "glutened" by cross contamination. Having said that, it is always smart to have your own toasters, utensils and cookware, snacks, etc. and keep them in a separate place.
  9. Tim, we cannot answer your question unless you give us not only your lab value results but the reference ranges used by the lab that did the analysis. Different labs use different reference ranges.

I can't say this with any certainty, but I believe spelt is an old world form of wheat that has not gone through so much hybridization as modern wheat.   12. Would getting tested and finding out you were positive for celiac disease strengthen your resolve to not eat gluten containing things? Since you are continuing to eat gluten, now would be the time to get tested rather than when you were on the gluten free bandwagon.   13. GodsGal, I grew up in Virginia but haven't lived there since 1976. Moved out west when I was 25. I agree. You can adapt some dishes to gluten-free and they are a reasonable facsimile of the original version but others you just have to let go of.
  14. When they hear "Mennonite," most people envision folks driving around in-horse drawn buggies with men wearing tall hats and women wearing long dresses and bonnets. But there are different Mennonite groups with some of them being more progressive and embracing modern technology. My wife's Mennonite heritage is the latter.

  18. Could be a lot of things but I would certainly look at changing GI docs. Any GI doc that tells you you don't need to be eating gluten prior to being tested for celiac disease is not to be trusted as competent. Unfortunately, there is still a lot of ignorance in the medical community with regard to gluten-related illness.

  21. Pernicious anemia is a fairly common cause for iron deficiency anemia. It's caused by lack of something called "intrinsic factor" which results in the inability to absorb B12, a necessary vitamin in the chain of biochemical transactions necessary to assimilate iron. You might get that looked into.
  22. You might try going gluten free for a period of time and see if things improve. Don't cut out all carbs. Just eliminate all sources of wheat, barley and rye. Those are the gluten-containing grains.
  23. Welcome to the forum, chris96856! Have you been diagnosed with celiac disease or with non celiac gluten sensitivity? You don't mention that so just wondering why you are posting in a forum about gluten-related disorders. Do you suspect you have celiac disease or NCGS?
  24. I get that and respect your decision. IMO, you should consider yourself to have celiac disease and get serious about eating gluten free. There is a real learning curve involved.
