I'm confused about mono- and diglycerides too. I have been avoiding anything that contains them. Then yesterday I bought a cookbook The Gluten- Free Baker's Pantry and alot of the recipes call for shortening. It was explained in the book that the Mono- and diglycerides in shortening are Acceptable. Why? I just don't get it. It's accepteable ...
