Newly Diagnosed In March-Swallowing Issues

I am a 56 yr old male who was recently diagnosed in March by Endo,Colon and Blood Test. My Blood work was 249 but I have gotten it down to 23. I have been staying on a strict gluten diet and now I am having Swallowing issues. Went back to my Gastrologist and he stretched my Esophagus and said it was due to Muscle Spasms in my Esophagus.
