Omg...i Might Be On To Something

What is everyone's diet looking like these days? We've been jumping around from topic to topic I was just curious how everyone is doing in that department.

I'm doing better since taking out some problem foods (like the Edward & Sons crackers & dried fruit). I notice big improvements as far as swelling and inflammation. I'm not feeling as puffy in my face and hands. When I get puffy I lose color in my skin and look kind of pale but now I have color again. I think it makes a big difference w/out the swelling cuz yesterday a customer stopped me and told me I had a really nice complexion. Stuff like that makes me feel like I'm slowly getting somewhere with all this.

I'm pretty certain that sulphites are causing my mouth blisters. I tried a marmalade last night. It wouldnt have anything in it that would irritate me except maybe sulphites. Well I got a big blister from it. Its weird though because back when I was eating lots of processed stuff I wasnt having a ton of blisters or anything but now the stricter I get with my diet I eat one spoonful of something and WHAM...there it is....big blister! :huh:

I may be posting more after tomorrow, lol. Tomorrow is another chicken challenge. :) My heel hasn't itched at all now for a couple of days. :)

I love "experiments".....its almost exciting for me to find out what happens with these challenges! :D

I guess if the "heel itch" comes back chicken will be out for good?

Taco Seasoning

1 T chili powder

2 t onion powder (or just grate some fresh onion)

1 t cumin

1 t garlic powder

1 t paprika (I use Hungarian sweet)

1 t dried oregano

1 t or T sugar

1/2 t salt

1 T cornmeal

1t cornstarch

Use like the packets--mix with the browned meat, add 3/4 H2O and let bubble to whatever consistency you like. My kids like it sweet, so I also add a squirt of molasses.

Hope your kids like it! Or at least eat it. :P

The McCormick packet has potato starch in it if you can use that. Can you use arrowroot or does that bother you. That can be substituted for cornstarch. Otherwise I would think potato starch would do the trick.

Celiac Pake

1 can sliced apples (drained)

2 cups brown rice flour

1 cup sugar

1 teaspoon salt

1 teaspoon baking soda

2 teaspoons of cinnamon, dash of nutmeg (only is using apple slices)

½ cup olive oil

2 eggs

1 teaspoon vanilla

1 cup chopped walnuts (optional)

Preheat over to 325 degrees.

Grease 2 regular size pie pans with real butter. (Glass baking pie pans has worked great for me, it cooks very evenly.)

Mix dry ingredients thoroughly.

Mix wet ingredients and add to dry, mix thoroughly.

Add apples, also apples can be substituted with peaches, pineapple, blueberries, mandarin oranges, cherries (any fruit will do, I’ve used canned (drained) and I’ve used fresh, both work)

Add any type of nut and mix.(optional)

Cook 50 minutes.

I have used every fruit available and it's worked wonderful!!

(except don't try strawberries...lol...that's the only fruit that didn't work)

psssttt ... did you notice it has no dairy? (or are eggs dairy?... <_< ...I'm confussing myself)

I am just not doing to well and my brain is numb.

Armetta...I'm sad that you're not feeling better yet. I'll keep you in my thoughts....is this still from when you started getting reactions from corn? I might have missed something in the posts since then so just double checking.

He's 7 months old today. :P He's also tired of being left alone. Time for some baby time. :P

any starch/ thickener will work!! You can use whatever combination of gluten-free flours you like. I think instant mashed potato flakes would work fine, too, or baby rice cereal.

For some reason I always think of eggs as dairy... maybe because they're in the dairy section in the grocery stores.. :wacko:

She drives me crazy with this...when I first went off dairy but was still eating eggs she would always say "Why are you eating eggs if you're suppossed to be not having dairy?" I dont know how many times I've told her by now that eggs are poultry..not dairy. She thinks that they must be dairy since they came from the dairy dept.

Last night I was eating coconut butter and she was questioning me about whether I should be eating it or not. She said "Well...doesn't it have dairy in it?" :blink:

I always say the same thing "Mom do eggs come from cow's?"

Now I have to say..."Mom...do coconuts come from cow's?"

She said coconut looks "milky" so it reminds her of dairy. :huh:

Our diet is only void of gluten, soy and beans. I'm allergic to kidney and navy, hubby has problems with pinto. He's of the frame of mind to get rid of the rest. We still have a package of brownie mix I think that has garbanzo bean flour in it. I might make that and see how we do. We've already thrown out so much food it's ridiculous. Hubby threw away our nutritional yeast as well. We threw out 25 lbs of hard white wheat, about 5-10 lbs soft white wheat (I had ground my own flour from the grain), bulgar, barley, pinto beans (7 lbs), soybeans (I used to make my own tofu), white beans, tofurky, mori nu tofu, soy good dry milk powder, kidney beans, carob chips, rolled oats and quick oats (I used to buy these in 25 lb bags also), plus some corn meal/flour I had ground because it was contaminated and I put popcorn kernels in a container that had wheat. I still have to throw that out. I also still need to try and clean my grain grinder but I don't think it can do rice. I'll have to look and see what is in bulk and decide whether I want to spring for a new mill. We are past being out of money with the diet changes and enterolab tests. Now we are thinking about peanuts since they are so closely allied with soy. Hubby and I are both intolerant. The kids scored 9 with 10 being the level for intolerance. We should probably go back to almond butter.

God I realte to you the amount of money I have wasted on food is insane!!! And the amount of food I've wasted - I try my best to give it away though to my sister or someone . I cannot stand throwing away food it drives me crazy.

My daughter is experiencing the symptoms after going gluten free and eating granola with oats, not to mention the gluten cookie grandma brought. She has had some tummy troubles this week with some diarrhea. :mellow: My oldest son snuck some rice dream with his cow's milk. :o He doesn't like the cows milk and he had just recently got used to rice dream instead of soy milk. We still have two cartons of rice dream hubby is working on since he's not intolerant.

They are in Lonview which is about 10 miles north of us. They just sat there today. Hopefully they will come the rest of the way tomorrow. If not I should have them Friday. I'm looking forward to making goodies.

I had wanted to give away some of it but my daughter got in a cutting, dumping in the garbage binge. She didn't sit to think that it would have been easier to just throw the bags away. It was more fun to cut and dump. :rolleyes: I tried to get rid of the wheat but not many people grind their own, especially being able to keep 25 lbs of kernels in the freezer.

I haven't gotten through all the posts and missed a LOT! Rachel, I hope this new medicine works out for you. The corn is soooooo hard to avoid. For all of you who are avoiding corn--I found a "sort of alternative" to corn bread-potato kugel. It lends itself well to adding mexican food- type fillings, believe it or not. It is cheap enough to buy the mix and experiment with for those of you who can have potatoes.

:lol: Most people think everything that's white must have milk in it. People say that a lot about mayonaise too. Then the same people will have yogurt for breakfast and pizza for lunch and then say they hardly had any dairy that day. It's quite odd really...

Thank you for asking Robbin. I am better tonight as I am only slightly wheezing. But, now I got this big rock sitting on my chest. I see the doctor tomorrow afternoon and we will see what he says. I don't want this to go into pneumona (sp).

Rachel, is your coconut butter have any soy, caisen or corn in it. If it doesn't could you tell me the name of it. Thank you.

Hum, I probably hurt something halfway through this thread, but not my foot, lol. Although the way we post on this thread, Friday probably WAS halfway through. :lol::lol::lol: I hurt my foot on Friday (6/16) afternoon just as I was finishing my workout.

Good news on the foot front, lol. As I also suspected, the doctor doesn't think it's broken or even sprained because I have excellent mobility with virtually no pain and she can't imagine that I could move that well with this little pain if it was broken. She thinks the swelling black spot yesterday was just blood collecting in my foot...I neglected to ask if we should be concerned WHERE the blood was coming from, lol. Anyway, she wants me to continue to do what I've been doing which is put up my feet when I can and elevate that foot while I sleep. Icing it in the evening is also a good idea. She thinks it will probably look pretty ugly for a couple of weeks.

Rachel - I like to do the same thing on my vacation time. I'm taking next Friday off and most of the following week. Friday I'm just going to hang out, but do have a hair appointment...next week I'm going to Las Vegas...

Hey, did you notice Cupertino Nutrition is gone! I went there yesterday to get some dairy free chocolate chips and they were GONE! :(

Robin - what is potato kugel...it sounds interesting! Is there a ready made mix or do you make it yourself?

Armetta - glad you are feeling a bit better...I've also been praying for you.

Celia, you are a sweetie to ask.

I'm on page 22 of this thread and want to read it all, there is so much I am figuring out by hearing your stories. I realized MSG was bad for me about 15 years ago (I was 36) and thought I was avoiding it as I don't eat highly processed food and never if I can see what I recognize as MSG on it but it seems they are very clever at getting us to consume this poison. I never had the severity of the symptoms that you have, I felt like something was scratching my skin from the inside out, headaches and extreme irritability. I did some research then and learned that, as was mentioned earlier it actually changes your brain so that you want to eat it.

I am confused about MSG and gelatin, why would MSG be in gelatin?

In addition to being a Celiac I have a kind of arthritis called Ankylosing Spondylitis which is related to the Celiac through the gut, basically they mutually support and reinforce eachother negatively. I finally acknowledged this winter that I needed help because I was in extreme pain and because I was/am melting. I have found our western system pathetically ill equipped to deal with any of these conditions and if another Doctor brings up stress I just hope I'm in full PMS mode not that I am really PMSing these days but you know what I mean.

So, how is it that we have a medical system that fails us by diagnosing us only when we are so sick that damage has been done and when we turn to the alternative health care industry and supplements we are poisoned by the packaging! How can this be possible?

This morning I haven't taken any supplements and a particular burning pain is not there so I am going to do what everyone was suggesting earlier in the thread and just do meat, fish, vegetables and fruit and see how that works. I've never been a pill person anyways.

I am beyond grateful to find this place and your voices. Thank you all.

Oh, and my life these days is just trying to get healthy, I am fortunate I have a great husband who can see that I am ill and is supporting me, he gave up bread in the house for now and he is even trying not to eat gluten out there in the world.

I am wondering if anyone has tried the Blood Type diet? And if you did what kind of success you have had with it?

I am thinking that if we are Celiacs then from the very beginning of our lives we have been poisoned and this poisoning damages our ability to trust our own bodies as to what we can have and what we can't. It sets us up for a lifetime of poor health not only because of how the gluten damages us but also because it confuses our natural ability to chose what is healthy for us.

Welcome to the thread. It took me a day to catch up on this thread and that was about 3 weeks ago. :blink: Lots of good info and fun stuff. I agree with you about the MSG. We had purchased Dr. Blaylock's book excitotoxins and eliminated everything he had listed under always contains but just limited stuff listed as may contain. Now with the list Rachel dug up we are learning we are still ingesting more than we would like. It's just so hard to totally avoid, especially with canned tomato products and cheddar cheese. Also with organic produce being sprayed with auxi-gro which is msg laced (although I don't know if all of it is). I'm thinking of checking out the Farmers Market in Vancouver WA so I can talk to organic farmers directly. I need to look up directions again.

I don't know how accurate the blood type diet is. The metabolic diet makes sense and is the first thing I've read that does. Keep us posted as you catch up and don't worry about posting comments as you go, we like to get everyone's input.

Just a random thought... I read everyone's posts on here and in my head I imagine they sound like me, I wonder how many of us have different accents... :D

No accent here, although some words come out slightly "valley girl" at times (not from the right area, so don't know where it comes from, lol). Also some words come out "mid-western" even though I'm from California...my parents were both from the mid-west so guess I learned pronounciation of some things from them.

Floridian - I LOVE carnation instant breakfast but haven't had it in years...now I can't because of the dairy, but gosh I loved that stuff, lol.

Donna--I use Vance's Dari Free as a milk sub. It tastes pretty good, has a good texture and makes a nice ice cream! I think it would taste good in Carnation Instant. If you haven't seen it, here's a link--

I didn't do well drinking Vance's plain. I got a headache...but that could have been other reasons as well, like not drinking enough water. :unsure: We still have the open package of Vance's but I went and bought organic dairy non fat milk powder.

I looked at the ingredients on the Dari Free, it's got a few ingredients but it's not the scarey stuff, looks pretty darn good!

I have so many sensitivities that when I found this (thanks to someone here on the board) I was so excited. I bought one carton, tried it, and was fine. The only downside to it is that it is not available any place locally here--the woman there checked for me--so I have to order it. Since it's really the only specialty food I use, it's worth it for me. ;)

I saw the Vance's Dairy free at Cupertino Nutrition (a health food store), but I went there yesterday and they (the store) was gone. :( I can also do soy milk, hazelnut milk and almond milk, but I think Carnation Instant breakfast has dairy in it by itself though--I could be wrong because it's been a long time since I've bought any.

A friend tells me there is another health food store near where my mom lives that claims to have the biggest gluten free selection in the Bay Area (that's what Cupertino Nutrition used to say--hey maybe they moved, lol), so I may go look there this weekend.

Course, if I starte drinking that stuff again I'll GAIN weight, which I really DON'T need, lol.

May I ask how much you pay for each carton and how much shipping it is. It is $9.25 (for 19.5 oz) at a store near us and if they charge a lot of shipping I could pick some up for you and ship it at exact cost. I don't know if they have both flavors or just plain. I have a scale and since I ebay I can also use paypal to print out the shipping slip and pay for the postage (at least I assume I can). Either way I have a scale so I would know the weight and what the postage would be.
