  1. I am a Rice Krispie ADDICT! I use Kraft marshmallow creme (I believe that's dairy free) and Erewhon rice cereal (remember it: nowhere spelled backwards, from an old sci fi novel). Super easy - melt the 'mallow creme, once it's warm, fill it up with the rice cereal. Just like my Mom used to make!!! Anyone else here super-suprised when they learned...
  2. These are so awesome! I shared them with my friends and family... they're learning! I especially liked the "ramming the cart into the shredded wheat display" one. I've often thought of sabotage in various bakeries... Good to see the humorous side of things. I've finally gotten so adjusted to things now, life is so much better! So for the newly...
  3. Thanks, everyone! I surely appreciate all the positive feedback and information that I get from this forum. Yes, I'm feeling better now... I think it's the prolonged stress thing, though. I anticipate some events and can just feel jerks and twists in my stomach when I think about them. I hate to think about what kind of endorphins/chemicals/hormones...
  4. Hi, All- I'm a newly diagnosed Celiac-positive person (June this year). Overall, I've been doing great! Since I've figured things out, I've felt 100% better and have never deliberately cheated (a couple accidents along the learning curve, but I'm getting there!) However, I have noticed that my symptoms sometimes really flare up and I can't tell...
  5. Hi, all- So, I understand that maltodextrin in food in America is supposed to be OK unless it specifically says maltodextrin from wheat... but I've read (on this forum) that in pharmacuticals, we need to be cautious! My question: I have been taking Equate Multivitamin and I see that maltodextrin is on the label. Do I need to call the company? ...
  6. Hi, All- Any news here? Any new products found? That Alpine Aire site was truly helpful. Does anyone have experience (recipes) for deyhdrating your own stuff? I have a dehydrator that I've only used successfully for jerky so far (the veggies have had mixed results). Can a person actually freeze dry their own stuff? That'd be awesome - freeze...
  7. That's a great idea!!! Let me know what you come up with. I am searching hard for pre-packaged meals I can take camping and traveling. By the way - I've investigated Mountain House and other camping food packages, and most contain wheat. I used to love MRE's (yeah, I know that's weird!) when I'd go camping. Hope that gluten-free ones are out there...
  8. I eat Tamari sauce now too - it SEEMS to be OK with me - but I'm still adjusting to the new diet. I hear there's a period where many folks go through a recurrence of symptoms. Maybe that's what is going on with you? I've also heard of people allergic to soy. I don't know enough about the origins of Tamari - perhaps that's part of the problem? Good...
  9. Hi, there - I'm new to this site, and am new to being gluten-free. I've read a couple other comments like yours because I have the same problem - thanks to all you veterans who are responding to us!! It seems to me there is a phase of initial recovery when we all feel better - then there's the relapse phase that apparently should go away soon. I...
  10. Good discussion - I am interested in hearing more. Like the Husker Fan that started this conversation, I went gluten-free and did great for 3+ weeks and then got symptoms again - D and the works - but only at weird intervals that could maybe be attributed to contamination as I get my diet figured out. Looking forward to that "getting well" and "staying...
  11. I deal with the same things - and I'm newly-diagnosed also (gluten-free for about 1.5 months now) I get way upset around the same time as my period - I've been wondering the same things. For me - I seem to get worse AFTER my period, but I've only had a sample size of like 2 to draw from here... I may have glutened myself too... I'll look forward to...
  12. Hi, All- I was recently-diagnosed with celiacs, and I've been trying to learn everything I can. I've been on my new diet about 1.5 months, and I've overall been lots better. However, I sometimes get recurrences of my old symptoms, and I really don't know why. I did make some mistakes early on (oats) but I'd like to think I got those ironed out. ...
