Some of my favorite gluten-free ignorant phrases...
Just after explaining to my boyfriend what Celiac is, he said the most amusing thing and we both laughed over it. He was embarassed and I was amused. Mind you, I had explained what gluten was and what it was in.
Kyle: "So can you have this Belgian waffle mix?"
(The obvious answer was no...but me being humerous responded as follows)
Me: "Well let's see.....First ingredient: Whole Wheat flour....so I am gonna say no on that one."
Kyle: "Wow, I can be really dumb sometimes."
Me: "Yeah, and I thought all Aerospace Engineers on the Dean's list were 'spossed to be geniuses!"
We both laughed about this one.
My friend at the supermarket:
"How about some whole wheat bread, the fiber would be good for your intestine."
If you call wheat fiber making my intestine better.
And more of my favorite phrases....
"This says gluten-free on it....but it also says that it is processed in a facility that also processes wheat. So you should be able to eat it...no problem!"
"Let's go to Baker's Square. I think you will like their pitas."
"Oh it's okay I used potato bread for your sandwich."
"Have a beer. This one isn't made with wheat it is made with barley."
"You can't eat wheat? But our family owns a wheat farming corporation."
"Hey that bakery is hiring, maybe you should work there!"
"Could you stamp and label these envelopes. Sorry but the stamps are the kind you lick."
"She's a hypochondriac and Celiac's isn't a real disease. She's just trying to get attention by faking that she is sick. I know what would prove she's faking. Let's crumble some bread crumbs into her granola. She wouldn't know so then she can't pretend to vomit or pretend she can't breathe. What a stupid b****."
fortunately on this one my friend Brenda replied to this jerk....
"Do you know that she was having 20 grand mal seizures a day in the hospital becuase of this? Do you want her to go in to anaphalaxis? How would you like to be exploding out your anus for 8 hours? You must have no soul. That last statement proved it. It's official you are not allowed in our circle of friends anymore."
Ha ha showed him!!
Needless to say, My sweetie Kyle has learned a great deal since then. He actually hugged my belly tightly and kissed it when my flab came back! He also loves to come over on Saturday nights and cook gluten-free with me so he can learn how the flours work. Sometimes he doesn't remember something, or messes up but he always asks first so that he doesn't poison me. Another thing, he has a seperate soap for me in his bathroom, separate toothpaste, deep cleans the kitchen before I come over, and he always lays out a seperate towel for me. Also he always brushes his teeth with my toothpast and mouthwash before he kisses me. What a gentleman!!!

I am a newly diagnosed Celiac, Gluten Intolerant, and DH student at the U of MN Twin Cities. I noticed that there is not alot of support for those of us with this problem. I would love to start a student organization, or group that could give us on campus support and resources. I know that there has to be students on campus with a gluten intolerance of some sort. Statistically this is true, 1 in every 150-200 people has Celiac's disease. This is not counting those of us with DH or Gluten intolerance.
Here's the deal, the U of MN student organization policy states that you need 5 people to start a club and then also to show that you will have members attending your activities.
I would love to get in contact with those of you on campus and pool our resources so that we can work together as a team to help those on campus and to help incoming freshman feel more at home on campus.
I also think that spreading awareness about how our Disorder affects people is key to helping others. Another great awareness project would be to talk to Boynton as a group about gluten related issues and also dining services about a gluten free menu option for students.

What are your favorite gluten-free items to bring with you? I am new at getting myself acclimated to this new diet. I bring snacks but that never is enough. What would you suggest?
I won't kick my boyfriend. I promise.

I am also a college student. I found that living in the dorms was not an easy experience. I was living in an apartment type dorm and had a very inconsiderate roommate. I had anaphlaxis once from her carelessness. I moved out into a single apartment, but then again I am a junior in college and I am accustomed to college life. Being a new student with a newly diagnosed lifetime disorder is not easy, I sympathize with you there.
I would definetely talk to the cooks and food services. The squeaky wheel gets the oil. Sometimes you have to be annoying to get your point across. Also make sure she is getting her vitamins. It is hard to keep your vitamins up if you can't eat the food. Fruit, Raw vegetables and gluten-free pre-prepared bread is also an option for her if she can't eat enough at the dining services. This of course would be in the interim, until she gets her diet established with the cooks. Do the research and find a natural foods store in her area that she can easily get to. This would provide her with gluten-free vitamins and other foods. If nothing else there is always online ordering, and the care package from home.
You could both brainstorm about what foods would be good to eat outside the dining hall so that she can stay healthy until she can eat a full meal at the dining facility.
To help support her, put together a care package, in it you can put gluten-free items for her use and maybe a list of resources in her area so that she can physically have it in her hands.

So I went to the Twin's game yesterday and afterwards my boyfriend and his family got the great idea to go to Baker's Square for pie....do I even need to say that it is a gluten-haven? Being nice I didn't say anything and went along with it. At the time I was extremely hungry. I had had breakfast but the game was long. I was at it from 12:00 to 5pm.
So we got to Baker's Square and ordered my beverage....water.....and the waitress came back and asked what I wanted to eat....I said no thanks.
So there I was at a booth with 5 other people...in between my boyfriend and his brother's girlfriend. So I sat there for the next hour watching him eat a brownie a la mode, and the girlfriend eat pumpkin pie. It was torture, and I was getting even hungrier. My boyfriend was well aware that I could not eat any of the food but didn't say anything when the parent's decided on a restaurant, because he is also too polite/nice.
What was the kicker though was that his mom asked "Why didn't you order anything?"
To this I replied "I have Celiac's disease."
She said "What's that?"
So then I had to explain that I can't eat gluten and what kinds of foods it was in.
What is so funny about this was that earlier in the summer before school started I spent a whole weekend (5 days) with my boyfriend's family up in Brainerd. So they accomodated my diet and cooked gluten free for me. I did manage to get glutened that weekend though because of cross-contamination.
Do some people just not have a memory? Do they just not take much interest in others? How hard should I kick my boyfriend in the shins for not saying something?
Peeved....yes. Super flaming angry mad....no. Concerned about my safety....definetely.
BTW the Twins won the Division Title! (For those of you that don't like the Twins, don't leave nasty comments about this....that would be not about the point of my post.)

I always find that my energy level is great in the morning, and then by the end of the day I am toast. This is why I try to plan my day accordingly and get to bed early. It makes it hard when you are a student and can't do late night things, but not being a zombie in class is better. I also find that my pain gets worse as the day goes on. Mornings are great for having less pain and stiffness. I usually find that a cup of ginger tea in the afternoon keeps my stomach happy and helps me feel happy too. Maybe you should try ginger tea? Find one that is just ginger shavings, with no flavor additives. It is a natural stomach soother and helps your digestion. Whatever you do, DO NOT drink peppermint tea, it actually irritates your stomach. Other than that, Pain, stiffness, and lack of energy just comes with the territory. It will get better with time. I promise, but your stomach is always going to be finicky until you heal more. Of course, everytime you get glutened it sets you back on the healing process, but that is inevitable, unless you live in a bubble and never go outside it.
I was wondering when you all started to feel better after going gluten free? I have been gluten free for two weeks and see my doctor in two weeks. I am not noticing any improvement yet, maybe a few good days the first week and that's it. I also have a lot of upper gi discomfort, ie chest pain and tightness and feeling very full or very hungry even whenI know I am not. As well as the lower gi discomfort. Not so much with the D but just trying to get comfortable and pass gas. With the upper I burp like a madwomen, it's horrid.[
It takes awhile! Give yourself time. If you think about it your intestine has been really badly damaged and it takes time to heal. It has been about 1 and 3/4 months for me and I am still not "perfect" or back to normal. Just take care of yourself. Take gluten-free vitamins. Drink lots of water. SLEEP! I know it is hard but this is what has helped me improve so much!

La Choy soy sauce is indeed gluten-free. Is there anything else you could have reacted to?
I had the meal at my boyfriend's apartment. He is able to eat gluten (makes life easier for him doesn't it?) It is true that he used his non-stick pan without cleaning it for me. Maybe I was glutened by him!
Thanks for letting me know that it is gluten free, now I can use it without the after affects.
I am sure he was not trying to intentionally gluten me.
On a lighter note, my boyfriend has come up with a name for when I get sick....."Fire in the Hole!" he calls it. Amusing to say the least, but at least you guys understand what that is like.

La Choy soy sauce and teriyaki sauce are gluten free and should be available in any grocery store.
In response to your post. La Choy products have carmel color in them which can be produced from a wheat based product. Generally carmel color is something to avoid. I had a stirfry meal with everything gluten-free except for the La Choy Soy Sauce and I got sick for 3 days. Be careful! You may be poisoning yourself without knowing it!

Here's another meatloaf idea:
For those of you that know Bette Hagman's Gluten Free Gourmet Cookbooks- here's my updated recipe that is just melt in your mouth good.
Take the Favorite Meatloaf recipe
Substitute Annie's Smokey Maple BBQ sauce for the Ketchup
Reduce or eliminate seasonings because the BBQ sauce has alot of flavor.
Use crushed up rice cereal instead of bread crumbs, It gives the meatloaf more substance.
Before putting in the oven, top with more BBQ sauce to make the meatloaf tender.
My Boyfriend says this meatloaf creation is better than his mom's (Don't tell mom, of course...), and she's an Irish Catholic mom that cooks lots of good meat and potatoes!
