Thanks for the informative replies. I still have a lot to learn about gluten & celiac disease. The reason I've considered allowing a bit of gluten into my diet is that I've always considered myself to have gluten intolerance but not celiac disease. My Enterolab test was positive for Celiac but negative for casein intolerance (my results here).
