My son is in the Gluten-free Casein-free diet, I bake this wonderful bread, but he saw the flax seed meal in the bread and he refuse to eat it. It is any sustitution for the 1/4 flax meal thanks

I am pretty new to cooking and baking breads, What kind of mixer do yuo use for gluten free bread. I have a hand mixer that I use to make cakes, It is ok for bread or what kind it is good?

A question, If I am going to use the bread for everyday use , can I leave outside or should I put it in the refrigarator or freeze it. I am new to the diet so want to to know how you store this kind of bread? thanks Helen
