  1. We have to agree that this is THE BEST bread and makes great sandwiches and is VERY easy to make. It also holds well for 3 days (which is the longest a loaf has lasted at our house) It also makes great french toast and grilled cheeses
  2. THANK YOU for this wonderful bread!!!!! I made one loaf yesterday afternoon and Kaitlyn Grace ate 3 slices, it was so good that I ended up making another loaf last night. I used skim milk and I warmed it in the microwave. It rose very beautifully while baking a good 2-3 inches above my pan and did not deflate after baking. It slices great, no crumbled...
  3. It was the Alton Brown one, Kaitlyn Grace was so happy when she watched him make cookies with her flour but was so disappointed in them.
  4. We LOVED this thank you so much for posting this!!! I made 5 batches of muffins and we froze them....they are great!!!!
  5. We made them twice and I thought they were awful and my 3 year old would not touch them. My 13 year old that eats anything took one bite, they were very grainy in texture and had a funky aftertaste.
  6. I don't get a chance to post much or read the board much, but was just wondering if anyone here is in the Dallas/Fort Worth area? We are in North Richland Hills Just wanted to email or chat with people to get the best ideas and places to shop here for things for my 3 year old. We LOVE our GI and have no doctor complaints (we go to Medical City Dallas) Please...
  7. Heidi, Yep the corn and gluten thing is crazy but doable. We have a private duty nurse 60 hours a week with my son. Kaitlyn Grace also has kidney reflux and GERD and lung problems, so they why us is starting. She asked me yesterday why she is always so sick and can't eat chicken nuggets anymore. I reminded her that she is not as sick as Noah and its only...
  8. Kaitlyn Grace started having problems also, we took her into her pedi because her hair started falling out (on top of the being tired) she was tested and put on an iron supplement, he said she was anemic. We are taking her in again next week to make sure her levels are going up.
  9. I sent them an email so maybe they will respond.....I forget about oats being cc......thanks guys, for now they will stay on the off limits kaitlyn grace shelf!!!! I will let y'all know if they respond to me or not :)
  10. Since I am still new to this i hope someone can help me, I found Odwalla bars in chocolate peanut flavor. here is the ingredient list: * Organic Rolled Oats * Brown Rice Syrup * Grape Juice Concentrate * Peanut Butter (Peanuts and Salt) * Dry Roasted Peanuts * Chocolate Chips (Organic Evaporated Cane Juice, Chocolate Liquor,...
  11. Kaitlyn Grace is only 3, but she also has a corn allergy, so she would always ask if something has corn in it, cause corn makes her sick. She is very funny about her corn allergy, she'll even ask her GI if she can try just a bit of corn, cause maybe since she is a big girl it won't make her as sick!! With the celiac, we did the same as the corn. Although...
  12. We went into her pedi yesterday and spent a lot of time talking. Kaitlyn Grace is very anemic, so we started a new vitamin. Again I thank all of you, I tend to go worse case scenario with everything!!! We are going to do this vitamin and after 2 weeks do another iron test, if she is still anemic, he said we should delve further.
  13. I was more concerned because it just started to happen, just this past weekend. We use the Suave kids 2 in 1 shampoo and johnsons buddies body wash. We also use burts bees, but I ran out last week. Her hair has never fallen out before, maybe I am being over paranoid!!! Since I am still new to this, what do I look for in the bath products? Would they say contain...
  14. You have all been a wealth of information to me. My 3 year old was diagnosed on 4/5/07 and has been gluten and wheat free since 4/6/07. I went the whole 9 yards, new pots pans, dishes silverware, sippy cups, strainers, toaster,etc... I know she is not being cross contaminated. This past Saturday, she woke up and had a clump of hair on her pillow, I didn...
  15. For pasta we use DeBoles. We love it, my husband said it is better than the whole wheat pasta we use to use. I have used it for mac and cheese and used it with homemade marinara. We have used the elbow macaroni and the pasta spirals. I used Pamela's Baking mix to make pancakes. I made a batch of silver dollar size and flash froze them then put 4 in a...
  16. So its been 2 weeks since we have gotten the Celiac Diagnosis, I think we have adapted very well. I got a new toaster for Kaitlyn Grace's waffles (btw the Vans waffles are awesome!!!) Right now I am still paranoid about her plates, so she is using the zoopals and dora paper ones, which she loves. We have had great success in making cookies, pancakes, brownies...
  17. Thank you for all the wonderful responses! I really think I just felt so overwhelmed on Friday, relieved to finally have an answer, but then it just seemed like we hit a brick wall!!! I spent the weekend cleaning and getting Kaitlyn Grace her own shelves in the pantry, do I need to change her dishes out? All weekend she's been eating off paper plates I got...
  18. Hello, my name is Amanda. My 3 year old daughter, Kaitlyn Grace, was diagnosed Friday with Celiac. We met with a dietitian at the hospital, who offered very little help. She said to use corn tortillas, corn chips etc to help the transition. I pointed out that Kaitlyn Grace is allergic to corn as well, as she said "wow you have some challenges" Any suggestions...
