If you want substitutes for making icing here's a few -- instead of butter - Nucoa margarine, coconut butter, palm shortening instead of milk -- coconut milk, soy milk (boxed Silk is good), or rice milk (but pretty thin) There are pluses and minuses about going dairy free.   2. Can you let us know if your son tries it and how it works out? I don't know much. I just know that it still has casein, and that there's been a trend for alternative doctors that were formerly pro-gluten & casein free, to start recommending this type of milk. My best friend tried it and she got ill, but she has a friend who seems to being doing OK drinking...
  3. That's so hard! I remember feeling so anxious about it when I used to have gluten in the house. I wasn't sure if a reaction was gluten contamination or a new food I tried.
