The way that my nutritionist explained it to me any carbohydrate with Maltodextrin, Modified Food Starch or Carmel Color is safe.If it is a protein you should be wary of these items and avoid them. My nutritionist at the Celiac Disease Center at Columbia let me know from her recent conversations with the FDA they are now saying that Modified Food Starch, MaltoDextrin, and Carmel Color are all safe unless it is in a protein. I.E If it is managed by the FDA it is safe. If it is managed by the USDA it to be questioned and avoided. I hope this helps some...

  4. Is it just the vinegar that makes BBQ sauce not Gluten Free? If I have BBQ chicken in a restaurant and they tell me that there is no vinegar in it and they do not put any kind of breading on the chicken is there anything else I should be watching out for? Thank you!
  5. Have any of you found a pre-made bread that is decent? The brown rice bread that I found at whole foods should be used as a paper weight and I bought a corn bread that crumbled into nothing. I actually had to eat it with a spoon. Any advice?

All of my tests came back negative for Celiac but my doctor decided to take a biopsy of my duodenum during an endoscopy on a whim and that was how I got diagnosed.   7. Thank you all so much for your advice! It is so nice to find somewhere that my questions can be answered because I have so many. I also have a doctor who seems confused about Celiac and doesn't have many answers for me. I guess my biggest concern is eating out. I keep hearing that Mayo can have gluten but I have yet to see it as a listed, or hidden ingredient...
  8. I was just diagnosed with Celiac and am confused as to when to avoid certain products. I have read disputing comments about wheat and Alcohol. Does anyone have advice? Also I was told that Mayonnaise, Mustard and Caramel can all contain Gluten but most labels that I have read appear to be Gluten free. How do you deal with it? Any advice would be appreciated...
