  1. I was diagnosed several years ago and recently I began to have episodes of my hands itching for no reason that I could detect. The only thing that stops it is to take a Benedril. Has anyone else experienced this? It's driving me crazy.
  2. About 10 years ago. I got to the point that I would start having a panic attack if I was out. I had to quit my job and haven't been able to work since. I've been on Paxil for the last 18 months and have been able to go out more but I still have panic attacks for no reason once in a while. No where near as bad as before.
  3. I guess their real busy. I think I might be a little bit to far away to attend the meetings. I'm 150 miles from Lexington and even further from Louisville. ;-) I doubt if I could go if I was close enough. I don't go out much. I have a problem being around people. I pretty much stay at home except for church and grocery shopping when I can't get hubby...
  4. Hi Not exactly sure where that is. I'm from Letcher County. Near the KY/VA border. About 30 miles souteast of Hazard.
  5. I noticed there hasn't been any posts here for a while. Is anyone from KY still here? I live in the mountains of Southeastern ky and as far as I know I'm the only celiac. I've been a member for a long time, just haven't posted in a long time. Hope someone is still posting from KY. Lucy
  6. You might also try potatoe flour or amaranth flour. I've used both and they are a little less grainy than the rice flours.

  8. Thanks for all the help. The area I live in is so rural that the only place that carries gluten-free products is a Food City and the only thing they have is Rice Flour. Hey Webgyrl, thanks for the info, I'll check them out. I could order online but can't really afford the cost of the product plus the cost of the shipping. I love to cook and use...
  9. Thanks Sara, This is a recipe for gluten-free noodles and it calls for: 2-1/2 cups White rice flour 2/3 cup Potato starch 1/3 c Tapioca Flour 3 tsp Xanthum Gum I have the different flours but I don't have the potato starch but I do have corn starch. Potato flour and potato starch is impossible to find in this area. Just wondered if I could substitute...
  10. I find so many recipe's calling for potato starch. My question is can I substitute Corn Starch for Potato starch?
  11. Thank you very much. I appreciate your answer. Lucy
  12. Okay, I give up. I've been trying to find out what Xanthum Gum is and what it's purpose is. I know that I probably sound dumb but I can't seem to find an answer. I asked the lady at the health store and she said it was used as an egg substitute. Is this true? I'm new at this, just diagnosed in November and I still am having a hard time baking any thing...
  13. Thanks a lot Shirley I'll have to have my daughter check and see if there is one in her area. She lives just outside of Chattanooga in Alabama. She goes to the city all the time. Wow! those are some really great prices. DH just brought me home a bag of brown rice flour and it was 3.00 for a 1 1/2 lb bag. Thanks again for the advice. Lucy
  14. I'm not sure about the pediasure but there is a form that you can fill out for your taxes so that you can claim anything that you have to buy because of being gluten-free. You can claim the difference between the cost of what you normally eat with what you now have to eat. Such as the difference between a bag of wheat flour and Rice flour. But you have to...
  15. Welda, I'll definitely try it. I have a recipe for Quick and Easy muffins and I have been eating them for quite a while. I take peanut butter and Jelly and smear it in the middle and it's wonderful. Here it is if you want to try it. 1/4 c sugar 2 tb shortening 2 ea eggs 1 c rice flour 1/4 ts salt 2 ts baking powder 1/2...
  16. Thanks Granny I will try the recipe. I also see where there are others added some too. I have spent the last 2 months trying to find recipe's that I can convert into food I can eat. I found a ground beef pizza crust and made it the other nite and it was delicious. Of course it might have just been all the ingredients I added on top. I have family...
  17. My mood swings and depression have just about disappeared since going gluten-free. None of my family ever understood what I was going through and like others they felt that I could control it. When I was told about the disease my husband was there and I asked the Dr. if the depression and mood swings could be a result of celiac disease he immediately said...
  18. I agree with JsBaby_G and Kvogt I've only been gluten-free since the 2nd of Nov but I feel like I'm a new person. No more fog but still have occasional bouts of depression and anxiety for no reason. No where near as often as before. I know this is going to sound crazy but I can now answer questions on Jeopardy. We used to watch it all the time...
  19. Thanks for the recipes. They sound great. My biggest problem is that I live in a very small town in the mountains of Southeastern Kentucky and the only place that carries anything gluten-free is the local Food City and that's Rice flour. I can't find any of the other ingredients like the different flours and the Xanthium Gum. When I say rural I mean rural...
  20. Hi Granny In your post you mentioned that you eat cornbread. Since the only way I know to make it is with meal and flour have you found a way to make it without the flour? If you have please let me know. I love cornbread and haven't had any since going gluten-free in November. I'd appreciate your recipe. Thanks, Lucy
  21. Please don't give up. I was just diagnosed and placed on the gluten-free diet in November and I like you am always hungry. But it is better than it was. Please don't risk your health for cravings. Please don't do that. I know how hard it is, there are times I just want to sit down and cry. I don't know how old you are but I'm 52 and that bread and pasta...
  22. I also had polyps found when they did my colonoscopy. None malignant. Thank God I'm so new to celiac disease that I can offer no help as far as research is concerned. I just found out in November and what I have learned about the disease has come from the internet. I have suffered indigestion problems for the last 30 years and got tired of being told...
  23. Hello Mariann Over the last 3 years I put on a whopping 80 lbs and didn't know why. Since going 100% gluten-free on Nov 2, 03 I have gone from 217 lbs to 203 lbs and hopefully I haven't stopped losing. I have been able to adjust to the gluten-free diet pretty well. I no longer have the bloating and constipation, unless I accidently eat something I shouldn...
  24. I know exactly how you feel. If you find out how to get rid of the hunger pangs let me know I'm just the opposite though. I gained a massive amount and have lost 15 lbs over the last 2 months since being diagnosed and going gluten-free. But I wouldn't trade it for the world. I haven't felt this good in 10 years. Lucy
  25. I guess I'm one of the lucky ones. I don't work anymore so I'm at home all day and when I do go out I don't eat out. I wait until I get home to eat. The only time I have had a problem is going places where I have no choice but to eat in a restaurant. One example was going with a group of people who stopped at a Fazoli's to eat. They knew ahead of time but...
