  2. Often wheat intolerant people are also intolerant of milk (casein) which can cause constipation as well. Switching to almond or rice milk as a test for a couple of weeks would be a good idea. Chia is an excellent addition to everyone's diet. It's the best source of vegetable omega 3's and also has tons of fiber, calcuim etc. A tablespoon ground in a smoothie...
  3. I can't comment on testing because we just removed gluten and where successful, so we haven't tested. The Quaker Oats are contaminated as are all oats unless they specify that they are gluten free. About 20% of wheat intolerant people can't digest oats either but you are so new to the diet you may just need to heal first and then try the gluten free oats...
  4. Recipezaar.com has lots of good gluten free recipes. Your library will have lots of gluten free cookbooks. I recommend taking out all of them and trying some recipes before you buy any cookbooks. Bette Hagman was the first gluten free cookbook author and her books were a godsend. We have a lot more gluten free flours to work with now than she had access...
  5. I've tried them all and settled on glutinous rice flour in almost everything. It never gets slimy like arrowroot and tapioca tend to. It disappears and doesn't effect the finished flavour.
  6. The Explosive Child by Ross W Greene is a great book! We are still working on our four year olds intolerances through elimination but this book was invaluable for dealing with his rage.
