Hi, has anyone tried Scott Adams's fruitcake recipe? or another one? I'm looking for one that won't dry out too soon, as gluten-free cakes do, so I can send it out to relatives this year. I saw one that's vegan at jeenaskitchen.blogspot.com but I figured if it's vegan, it's probably gummy, and it doesn't need to be vegan, just Gluten-free...any suggestions...

it might have been the person you spoke to - Bob's Red Mill packages now say they are certified gluten free. That person might not know this. go to the web site here Open Original Shared Link and they show a picture of the packages that are gluten free. It's possible some of the corn flours are not, but you can be sure that in that case those packages won...

I realize your post is from 6 months ago, but it just so happens that I just made Dutch Babies using Pamela's pancake mix and me and my husband ate the whole batch between ourselves, they were so good! i got the recipe from a Whole Foods circular! They were FANTASTIC. I couldn't find the recipe on Pamela's website though, so I guess the WholeFoods chefs made...
